if you're referring to 'why it took so long', its because this level of realism is quite hard to achieve in terms of cgi, seems this artist is one of the better ones around (which answers the 'why do it at all')
though imo its not all cgi, the photo-realistic textures were likely taken & adapted from photographic images and the constant motion, shadows & distance/perspective may help to hide any imperfections, still its impressive work
