Difficult to choose 1 so i will put 4 where i spent many many hours:
Final Fantasy 7 (on PSX)
Age of Empires 2 (on PC)
Resident Evil 4 (on PS2)
Soul Calibur 3 (on PS2)
Of course, there many others that i loved but these are the games where i spent the more time.

There are so many games I've enjoyed but the most memorable ones for me are as follows:
80's: IK+. It was the most amazing thing I had ever seen (or heard, as sounds were sampled from Bruce Lee movies. :) ) or played. It spawned the beat'em up fan in me.
90's: Civilization II. I can't tell you how many sleepless nights I spent playing this one. The first Civ was amazing but this had everything done better. The wonder movies were awesome, especially the music in them. The funniest part was the advisor screen. Runner ups are the Fallout games (not Tactics nor POS though).
00's: Tie between Tekken 5 & CivIV (with BTS). Overall though not many games have really appealed to me in the 00's.

I'm an old school gamer, so my all time fav game happens to be Super Mario Bros 3. For new games, Probably the Smash Bros series or Zelda LttP.
