That's why they use cloaking.

you can even have displayed whatever you like. it's called vhost. hence the irc topic says: "To get a vhost, join #vhost."

You can see your own IP (the one you are connected with the irc server [could be a VPN or whatever]) through whois. Others can't, except for the IRC owners. If you don't want your hostname shown, then get a vhost from #vhost
